California is in the midst of an almond rush as the price for the protein rich nut has skyrocketed. If the world’s food supplies ever faltered, almonds are a source of protein that requires less resources than meat or dairy. However, they are also a water intensive crop that are draining aquifers quickly. California produces 80 percent of the world’s almonds and 100% of the United States’.
