"The Slaughter"

Parañaque, Philippines - Using a large saw (splitter), a worker saws open the middle of the spine to dislodge the bones of a newly slaughtered pig at Parañaque Meat Processing and Slaughterhouse Corporation located 15 kilometers outside Metro Manila. Parañaque Meat Processing and Slaughterhouse Corporation provides slaughtered pigs to grocery stores and wet markets throughout the Philippines. In the Philippines, as with many other developing countries, a new and growing demand for meat and dairy is reshaping diets and global markets. To fulfill this demand, traditional backyard-style farms in such places as the Philippines are losing market share to larger, more industrial operations, the kind considered by critics as “factory farms.” Purchasing elite DNA—either frozen or chilled semen, frozen embryos or live animals—is a logical next step, jump-starting a process that normally takes decades of selective breeding.
